Tuscan Chicken Pasta Recipe

12 oz fettuccine or penne pasta

2 boneless, skinless chicken breasts

2 tbsp olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat. Add chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.

      Sauté Vegetables: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook for 3-4 minutes until they start to soften. Then, add baby spinach and sun-dried tomatoes, stirring until the spinach wilts.

        Make the Sauce: Pour in heavy cream, stirring well to combine with the veggies. Add Italian seasoning and Parmesan cheese, mixing until the cheese melts and the sauce thickens slightly. If the sauce is too thick, add reserved pasta water little by little until desired consistency is achieved.

          Combine: Add the cooked pasta and sliced chicken to the skillet. Toss to coat everything evenly in the sauce.
