Ingredients
  

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon vinegar)

2 large eggs

1/4 cup melted butter

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

Optional toppings: whipped cream, fresh berries, chocolate syrup

Instructions
 

In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid over-mixing; a few lumps are okay. Fold in the chocolate chips.

        Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a bit of extra butter.

          Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the edges and the surface looks set, about 2-3 minutes.

            Carefully flip the pancakes and cook for another 2 minutes on the other side, or until they are fully cooked through and have a slight crisp.

              Remove the pancakes and keep them warm while you repeat with the remaining batter.
