Ingredients

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cookie Layer:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the Brownie Layer:

      - In a medium saucepan over low heat, melt the 1/2 cup butter. Remove from heat and stir in the sugar. Mix well until combined.

        - Allow the mixture to cool slightly, then add in the eggs and vanilla extract. Beat well until smooth.

          - In a separate bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add this dry mixture into the wet mixture until just combined. Do not overmix. Pour the brownie batter into the prepared baking pan and spread evenly.

            Prepare the Cookie Layer:

              - In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

                - Beat in the egg and vanilla extract until well combined.

                  - In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients into the wet ingredients until just combined. Stir in the chocolate chips.

                    Assemble the Browkies:

                      - Using a spoon or cookie scoop, drop spoonfuls of the cookie dough on top of the brownie layer. You can also gently spread the cookie dough to cover more of the brownie layer.

                        Bake:

                          - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).

                            - Once baked, remove from the oven and let cool in the pan for 10-15 minutes before lifting out the parchment paper to a wire rack to cool completely.

                              Slice and Serve:

                                - Once completely cool, slice into squares and serve. Enjoy with a glass of milk or as is for a delicious treat!
