1 cup black beans, rinsed and drained

1 avocado, diced

1 cup red bell pepper, diced

1 cup romaine lettuce, chopped

½ cup red onion, finely chopped

½ cup cilantro, chopped

1 lime, juiced

¼ cup olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Tortilla strips or crushed tortilla chips for garnish

Instructions

In a large mixing bowl, combine the chopped chicken, cherry tomatoes, corn, black beans, avocado, red bell pepper, romaine lettuce, red onion, and cilantro. Toss gently to combine all the ingredients.

In a separate small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper to create the dressing. Adjust the seasoning to taste.

Drizzle the dressing over the salad mixture and toss again until everything is well coated.

If desired, keep the salad chilled in the refrigerator for about 15-30 minutes to let the flavors meld together.
