1 lb boneless chicken thighs, cut into bite-sized pieces

1 cup uncooked jasmine rice

2 cups water or chicken broth

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon vegetable oil

1 cup broccoli florets

1/2 bell pepper, sliced

1 carrot, julienned

2 green onions, chopped

Sesame seeds for garnish

Salt and pepper to taste

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the washed rice and 2 cups of water or chicken broth. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until all the liquid is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.

    Prepare the Teriyaki Sauce: In a small bowl, whisk together soy sauce, mirin, brown sugar, minced garlic, and grated ginger. Set aside.

      Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through.

        Add Vegetables: Add the broccoli, bell pepper, and carrot to the skillet with the chicken. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
