1 lb (450g) boneless, skinless chicken thighs

2 tablespoons vegetable oil

1/4 cup soy sauce

1/4 cup honey

2 tablespoons fish sauce

1 tablespoon sambal oelek (or any chili paste)

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon lime juice

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (adjust to taste)

1/4 cup chopped fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the soy sauce, honey, fish sauce, sambal oelek, minced garlic, minced ginger, lime juice, black pepper, and red pepper flakes. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).

    Prepare the Cooking Surface: Heat the vegetable oil in a large skillet over medium-high heat. When the oil is hot, carefully add the marinated chicken thighs to the skillet, reserving the marinade.

      Cook the Chicken: Sear the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C).

        Create the Sauce: Once the chicken is cooked, pour the reserved marinade into the skillet. Bring it to a simmer and cook for an additional 3-4 minutes, until the sauce thickens slightly.
