2 large red onions, thinly sliced

2 tablespoons sumac spice

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 teaspoon salt

1 teaspoon freshly cracked black pepper

Juice of 1 lemon

1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions
 

In a large bowl, combine the sliced red onions with the salt and allow them to sit for about 10 minutes. This will help draw out excess moisture and soften the onions.

    In a separate bowl, whisk together the olive oil, balsamic vinegar, sumac, black pepper, and lemon juice until well combined.

      After the onions have rested, rinse them under cold water to reduce their sharpness and drain well.

        Add the drained onions to the bowl with the sumac dressing. Toss well to coat the onions evenly with the mixture.

          Let the onions marinate for at least 20 minutes at room temperature to allow the flavors to meld. If you have more time, letting them sit for up to an hour will enhance the flavor even further.

            Once marinated, taste and adjust seasoning if necessary. Serve the sumac onions chilled or at room temperature, garnished with chopped parsley.
