Strawberry Peach Crisp

For the filling:

3 cups fresh strawberries, hulled and sliced

3 cups fresh peaches, pitted and sliced

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon ground cinnamon

For the crisp topping:

1 cup old-fashioned oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup chopped pecans or walnuts (optional)

Instructions
 

Preheat your oven: Preheat the oven to 350°F (175°C).

    Prepare the fruit filling: In a large mixing bowl, combine the sliced strawberries and peaches. Add the granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Toss gently until the fruit is well coated. Transfer this mixture to a greased 9x13 inch baking dish.

      Make the crisp topping: In another bowl, mix together the oats, all-purpose flour, brown sugar, baking powder, cinnamon, and salt. Pour in the melted butter and mix until all the dry ingredients are moistened and crumbly. If you’re using nuts, stir them in.

        Combine the layers: Evenly distribute the crisp topping over the fruit filling in the baking dish.

          Bake: Place the baking dish in the oven and bake for 35-40 minutes or until the topping is golden brown and the fruit is bubbling.

            Cool and serve: Once done, remove the crisp from the oven and let it cool for about 10 minutes. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
