2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 small onion, finely chopped

2 cloves garlic, minced

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Optional: salsa or sour cream for serving

Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent and fragrant, about 3-4 minutes.

    Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with oregano, salt, and pepper to taste. Remove from heat.

      Prepare Quesadilla Filling: In a bowl, mix the sautéed spinach and onion mixture with crumbled feta and shredded mozzarella cheese until well combined.

        Assemble Quesadillas: Place a tortilla in the same skillet over medium heat. On one half of the tortilla, spread a generous amount of the spinach and cheese mixture. Fold the tortilla over to create a half-moon shape.

          Cook Quesadilla: Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted. Repeat with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

            Serve: Cut quesadillas into wedges and serve warm with salsa or sour cream on the side for dipping.
