Ingredients

1.5 lbs boneless, skinless chicken breasts

2 tablespoons olive oil

3 fresh jalapenos, sliced (seeds removed for less heat)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chicken broth

1/4 cup fresh lime juice

1/4 cup chopped fresh cilantro (for garnish)

Optional: sliced avocado and sour cream for serving

Instructions

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. This will help them cook evenly and absorb the flavors better.

Spice the Mix: In a mixing bowl, combine the smoked paprika, cumin, chili powder, salt, and black pepper. Toss the chicken pieces in the spice mixture until well coated.

Sauté the Peppers: Heat the olive oil in a large skillet over medium heat. Once hot, add the sliced jalapenos and cook for about 2-3 minutes, until they begin to soften.

Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to burn it.

Cook the Chicken: Add the seasoned chicken pieces to the skillet. Cook for about 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add Liquid: Pour in the chicken broth and lime juice. Stir well to combine and bring to a simmer. Let it cook for another 3-4 minutes, allowing the sauce to reduce slightly.

Garnish and Serve: Once cooked, remove from heat and garnish with chopped cilantro. Serve hot, optionally with sliced avocado and a dollop of sour cream for extra creaminess.
