Spicy Honey-Lime Chicken

4 boneless, skinless chicken thighs

1/4 cup honey

1/4 cup fresh lime juice

2 tablespoons soy sauce

1 tablespoon sriracha (or more for extra heat)

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

Chopped fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together honey, lime juice, soy sauce, sriracha, minced garlic, cumin, paprika, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill or Skillet: If grilling, preheat your grill to medium-high. If using a skillet, heat olive oil in the skillet over medium heat.

      Cook the Chicken: Remove the chicken from the marinade (reserve the marinade) and place on the grill or in the skillet. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

        Prepare the Sauce: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer for about 5 minutes, thickening slightly.

          Glaze the Chicken: In the last couple of minutes of cooking, brush some of the thicken marinade over the chicken to enhance the flavor.

            Serve: Remove the chicken from the heat and let it rest for a few minutes. Slice it and drizzle the remaining sauce over the top. Garnish with chopped cilantro and serve with lime wedges on the side.
