Spicy Brazilian Coconut Chicken

4 boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1-2 fresh red chili peppers, chopped (adjust for spice level)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon turmeric

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and chopped chili peppers; cook for an additional 2-3 minutes until fragrant.

      Add the smoked paprika, ground cumin, and turmeric to the skillet, stirring well to combine the spices with the onion mixture. Cook for 1-2 minutes to let the spices bloom.

        Season the chicken thighs with salt and pepper. Add them to the skillet, browning them on each side for about 4-5 minutes.

          Pour in the coconut milk, and stir gently to combine with the chicken and spices. Bring the mixture to a simmer.

            Reduce the heat to low, cover the skillet, and let the chicken cook for about 20-25 minutes or until cooked through, stirring occasionally.

              Once the chicken is cooked, squeeze the lime juice over the top and stir gently. Adjust seasoning with salt and pepper, if necessary.
