Southwest Ground Beef and Sweet Potato Skillet

Ingredients
  

1 lb ground beef (85% lean)

2 medium sweet potatoes, diced into small cubes

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes, undrained

1 cup corn (frozen or fresh)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1 cup shredded cheddar cheese (optional)

Fresh cilantro or parsley for garnish

Slices of avocado (for serving, optional)

Instructions
 

Prepare the Sweet Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and a pinch of salt. Sauté for about 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized. Remove from the skillet and set aside.

    Cook the Ground Beef: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute.

      Brown the Beef: Push the veggies to one side of the skillet and add the ground beef. Cook, breaking it apart with a spatula, until it’s browned (about 5-7 minutes). Drain any excess fat if necessary.

        Season the Mixture: Once the beef is cooked through, stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to coat the beef and veggies in the spices.

          Add Tomatoes and Corn: Stir in the canned diced tomatoes (with juices) and corn. Let the mixture simmer for about 5 minutes to heat through and blend the flavors.

            Combine with Sweet Potatoes: Gently fold the sautéed sweet potatoes back into the skillet. Mix until everything is well combined and heated through.

              Add Cheese: If using, sprinkle shredded cheddar cheese on top. Cover the skillet and allow it to melt for about 2-3 minutes.

                Serve: Garnish with freshly chopped cilantro or parsley. Serve warm with slices of avocado, if desired.
