Slow Cooker Lemon Herb Chicken and Rice

Ingredients
  

4 boneless, skinless chicken breasts

1 cup jasmine rice, rinsed

2 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 lemon (zested and juiced)

2 tsp dried thyme

1 tsp dried rosemary

1 tsp dried oregano

1 tsp salt (adjust to taste)

1/2 tsp black pepper

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

In the slow cooker, place the rinsed jasmine rice evenly at the bottom.

    Add the diced onion and minced garlic over the rice.

      Place the chicken breasts on top of the onion and garlic layer.

        In a bowl, combine chicken broth, lemon juice, lemon zest, dried thyme, rosemary, oregano, salt, and black pepper. Mix well.

          Pour the lemon herb mixture over the chicken and rice, ensuring the rice is submerged in the liquid.

            Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and rice is tender.

              If using, add the frozen peas in the last 30 minutes of cook time.

                Once done, gently fluff the rice with a fork and shred the chicken in the slow cooker for added flavor.

                  Serve with a sprinkle of fresh parsley on top for garnish. Enjoy your meal!
