2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

1 large egg

1/2 cup milk (or plant-based milk)

1 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Oil for frying

Powdered sugar for dusting (optional)

Prepare the batter: In a large mixing bowl, combine the mashed bananas, flour, granulated sugar, baking powder, baking soda, salt, and cinnamon (if using). Mix well.

    Incorporate wet ingredients: In another bowl, whisk together the egg, milk, and vanilla extract until well combined. Pour this mixture into the dry ingredients and stir until just combined. If you’re adding nuts, fold them in gently.
