Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 tsp chili powder

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper, to taste

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt

2 tbsp mayonnaise

Juice of 1 lime

1 tsp chili powder

Salt, to taste

For the Bowls:

2 cups cooked quinoa or brown rice

1 large avocado, sliced

1 cup cherry tomatoes, halved

Fresh lime wedges, for serving

Instructions
 

Prepare the Shrimp:

    - In a mixing bowl, combine the shrimp with olive oil, chili powder, garlic powder, smoked paprika, salt, and pepper. Toss until the shrimp are evenly coated.

      - Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and set aside.

        Make the Mango Salsa:

          - In a medium bowl, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir gently to combine and let it sit while preparing the other components.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, and salt until well combined. Adjust seasoning to taste and set aside.

                Assemble the Bowls:
