1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1 jalapeño, minced (adjust for spice preference)

1/4 cup red onion, finely chopped

Juice of 1 lime

Salt, to taste

For the Lime-Chili Sauce:

1/4 cup mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon honey (optional)

Salt, to taste

Instructions
 

Prepare the Mango Salsa:

    - In a medium bowl, combine the diced mango, red bell pepper, jalapeño, and red onion.
