Ingredients
  

1 lb (450g) smoked sausage or chicken sausage, sliced into 1-inch pieces

2 cups bell peppers, sliced (mix of red, yellow, and green)

1 medium red onion, chopped

2 cups zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley or basil, for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    On a large sheet pan, combine the sliced sausage, bell peppers, red onion, zucchini, and cherry tomatoes.

      In a small bowl, whisk together the olive oil, minced garlic, dried oregano, paprika, salt, and pepper. Pour this mixture over the sausage and veggies.

        Toss everything together until the vegetables and sausage are well-coated with the oil and seasoning mixture.

          Spread the mixture out evenly on the sheet pan to ensure even cooking.

            Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and the sausage is heated through, stirring halfway through cooking.

              Once done, remove from the oven and garnish with fresh parsley or basil if desired. Serve hot and enjoy!
