2 cups cooked jasmine rice (preferably day-old)

1 lb chicken thighs, boneless and skinless, diced

3 tablespoons teriyaki sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 cup frozen mixed vegetables (peas, carrots, and corn)

3 green onions, chopped

2 cloves garlic, minced

2 large eggs, beaten

1 tablespoon mirin (optional for extra flavor)

Salt and pepper to taste

Toasted sesame seeds for garnish

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with teriyaki sauce, soy sauce, and mirin. Let it marinate for at least 15 minutes, allowing the flavors to meld.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until the chicken is cooked through and slightly caramelized. Remove the chicken from the pan and set aside.

      Scramble the Eggs: In the same skillet, add a little more oil if needed and pour in the beaten eggs. Scramble them until just cooked but still soft. Remove and set aside with the chicken.

        Sauté Vegetables: In the same pan, add sesame oil and the remaining vegetable oil. Add minced garlic and let it sauté for about 30 seconds until fragrant. Toss in the frozen mixed vegetables and cook for another 2-3 minutes until heated through.

          Add Rice: Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir-fry for about 3-4 minutes, combining the vegetables well with the rice.

            Combine Everything: Return the cooked chicken and scrambled eggs to the skillet. Sprinkle in the chopped green onions and toss everything together. Drizzle with additional soy sauce and season with salt and pepper to taste.

              Serve: Once thoroughly combined and heated through, remove from heat. Transfer the fried rice to serving plates, garnish with toasted sesame seeds and fresh cilantro if desired.
