Rosemary Garlic Steak Kebabs

1.5 lbs sirloin steak, cut into 1.5-inch cubes

1/4 cup olive oil

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

1 red bell pepper, cut into 1.5-inch pieces

1 green bell pepper, cut into 1.5-inch pieces

1 red onion, cut into 1.5-inch pieces

Marinate the Steak: In a large mixing bowl, whisk together the olive oil, minced garlic, chopped rosemary, balsamic vinegar, Dijon mustard, salt, and black pepper. Add the steak cubes and toss until they're evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour (or up to overnight for more flavor).

    Prepare the Skewers: If you’re using wooden skewers, soak them in water for about 30 minutes before grilling to prevent burning.

      Assemble the Kebabs: Remove the marinated steak from the refrigerator. Begin to thread the steak cubes, red bell pepper, green bell pepper, and red onion onto the skewers, alternating ingredients. Aim for about 3-4 pieces of steak between each vegetable.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).

          Grill the Kebabs: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally to get an even char, until the steak reaches your desired level of doneness (medium-rare is typically around 135°F or 57°C).

            Rest and Serve: Once the kebabs are cooked, remove them from the grill and let them rest for 5 minutes. This allows the juices to redistribute throughout the meat. Serve warm, either on their own or with a side of tzatziki or your favorite dipping sauce.
