Ingredients
  

2 cups cooked chicken, shredded or diced (rotisserie chicken works great)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen and then thawed or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheese (cheddar or Mexican blend)

3 tablespoons olive oil

2 tablespoons lime juice

1 teaspoon chili powder

Salt and pepper to taste

Tortilla strips for topping (optional)

Instructions
 

In a large mixing bowl, combine the cooked chicken, black beans, corn, red bell pepper, cherry tomatoes, avocado, red onion, and cilantro.

    In a separate small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper until well combined to create your dressing.
