500g chicken breast, diced

2 tablespoons ghee or vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece fresh ginger, grated

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust to taste)

1 can (400g) crushed tomatoes

1 cup heavy cream

Salt to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan bread (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with half of the garlic, ginger, turmeric, chili powder, and salt. Cover and let it marinate for at least 15 minutes while you prepare the base.

    Cook the Onions: In a large skillet, heat the ghee or oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.

      Add Spices: Stir in the remaining garlic, ginger, garam masala, cumin, and chili powder. Cook for another 2 minutes, allowing the spices to bloom and release their aroma.
