4 cups fresh pineapple, cut into 1-inch rings

2 cups granulated sugar

1 cup apple cider vinegar

1 cup water

1 tablespoon crushed red pepper flakes (adjust for spice level)

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1 jar (16 oz) canning jars with lids

Prepare the Pineapple: Start by peeling and slicing the fresh pineapple into 1-inch rings. Use a cookie cutter to remove the core from each ring and cut them into bite-sized pieces if preferred.

    Make the Syrup: In a large pot, combine the sugar, apple cider vinegar, water, crushed red pepper flakes, cinnamon, ginger, cloves, and salt. Bring the mixture to a gentle boil over medium heat, stirring until the sugar has completely dissolved.

      Add Pineapple: Once the syrup is boiling, add the pineapple pieces to the pot. Reduce the heat to a simmer and cook for about 10-15 minutes, ensuring the pineapple is well coated with the syrup.
