1 lb flank steak, thinly sliced against the grain

2 tablespoons vegetable oil

1 cup bell peppers (red, green, and yellow), sliced

1 large onion, sliced

3 cloves garlic, minced

1 teaspoon minced ginger

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon black pepper

1 teaspoon sugar

Cooked rice or noodles, for serving

Optional garnish: sliced green onions and sesame seeds

Instructions
 

Marinate the Steak: In a bowl, mix the sliced flank steak with soy sauce, black pepper, and sugar. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Sauce: In a small bowl, combine the oyster sauce, cornstarch, and water to create a slurry. Set aside.

      Stir-Fry Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onions and bell peppers, and stir-fry for 3-4 minutes until they begin to soften. Stir in the minced garlic and ginger, continuing to stir-fry for another minute until fragrant. Remove the vegetables from the skillet and set aside.

        Cook the Steak: In the same skillet, add the remaining tablespoon of oil. Increase the heat to high and add the marinated steak in a single layer. Cook for 2-3 minutes without stirring, allowing a nice sear to develop. Flip the steak slices and cook for another 2-3 minutes until browned and cooked through.

          Combine Everything: Return the cooked vegetables to the skillet with the steak. Pour in the oyster sauce slurry, stirring everything together to ensure even coating. Cook for an additional 2 minutes until the sauce thickens and the dish is heated through.
