One-Pot Lemon Chicken Gnocchi Delight

Ingredients
  

1 lb boneless, skinless chicken thighs, diced

1 tablespoon olive oil

4 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup chicken broth

Juice and zest of 1 large lemon

12 oz package of gnocchi

1 cup spinach, roughly chopped

1/2 cup heavy cream

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced chicken thighs, seasoning them with salt, pepper, oregano, garlic powder, and onion powder. Cook until golden brown, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and minced garlic, cooking until translucent and fragrant, about 3-4 minutes. Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.

      Combine Ingredients: Pour in the chicken broth, lemon juice, and lemon zest, scraping the bottom of the pot to deglaze and incorporate any browned bits. Bring to a gentle simmer.

        Add Gnocchi: Stir in the gnocchi and return the cooked chicken to the pot. Cover and cook for 3-5 minutes, or until the gnocchi are tender and floating to the surface.

          Finish with Cream and Spinach: Reduce the heat to low, stir in the heavy cream, and add the chopped spinach. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through. Adjust seasoning with more salt, pepper, or lemon juice if desired.

            Serve: Garnish with fresh parsley before serving and enjoy your bright, flavorful dish!
