One-Pan Honey BBQ Chicken Rice

Ingredients
  

2 cups jasmine rice, rinsed

1 pound chicken thighs, boneless and skinless

1 cup honey BBQ sauce

2 cups chicken broth

1 red bell pepper, diced

1 cup corn (fresh or frozen)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

3 green onions, chopped (for garnish)

Fresh cilantro (optional, for garnish)

Instructions
 

In a large, deep skillet or a Dutch oven, heat a drizzle of oil over medium-high heat. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.

    Place the chicken thighs in the skillet and sear for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.

      In the same skillet, pour in the chicken broth and bring it to a simmer. Stir in the rinsed jasmine rice and diced red bell pepper.

        Return the chicken thighs to the skillet, and pour the honey BBQ sauce over the top, ensuring the chicken is well coated.

          Cover the skillet with a lid and reduce the heat to low. Simmer for 20-25 minutes, or until the rice is tender and has absorbed the broth. Stir occasionally to prevent sticking.

            During the last 5 minutes of cooking, add the corn into the mixture to heat it through.

              Once done, fluff the rice with a fork, check seasoning, and adjust if necessary.

                Serve warm, garnished with chopped green onions and fresh cilantro if desired.
