No Bake Pineapple Cream Dessert

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 can (20 oz) crushed pineapple in juice, drained

1 cup shredded coconut (unsweetened or sweetened based on preference)

1 cup graham cracker crumbs

1/4 cup melted butter

1/2 cup toasted coconut (for garnish)

Fresh pineapple slices (for garnish)

Instructions
 

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated. Press this mixture into the bottom of a 9x13 inch baking dish evenly and firmly to create a crust. Refrigerate while you prepare the filling.

    Make the Cream Mixture: In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Make sure there are no lumps.

      Whip the Cream: In a separate bowl, whip the heavy whipping cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.

        Add Pineapple and Coconut: Fold the drained crushed pineapple and shredded coconut into the cream mixture until evenly distributed.

          Layer the Dessert: Pour the pineapple cream mixture over the prepared graham cracker crust, spreading it out evenly. Smooth the top with a spatula.

            Chill: Cover the dessert with plastic wrap and refrigerate for at least 4 hours, or overnight for best results, allowing the flavors to meld and the dessert to set.

              Garnish and Serve: Once chilled, remove from the refrigerator and sprinkle toasted coconut on top. You can also add fresh pineapple slices for an extra touch of tropical flavor. Cut into squares, serve, and enjoy!
