Mediterranean Chicken Pasta Salad

2 cups pasta (such as rotini or penne)

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), chopped

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup balsamic vinaigrette (or dressing of choice)

Instructions
 

Cook the Pasta: Begin by cooking the pasta according to package directions in a pot of salted boiling water. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with olive oil, Italian seasoning, salt, and pepper. Heat a grill pan or skillet over medium heat and cook chicken for about 5-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from heat and let rest for 5 minutes before slicing.

      Mix the Veggies: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, parsley, and basil.

        Combine Ingredients: Add the cooled pasta and sliced chicken to the bowl with the vegetables. Toss gently to combine all ingredients.

          Dress the Salad: Drizzle the balsamic vinaigrette over the pasta salad. Toss everything again until well coated. Adjust seasoning with more salt and pepper if needed.

            Chill and Serve: For the best flavor, cover and refrigerate the pasta salad for at least 30 minutes before serving. Serve chilled or at room temperature, topped with crumbled feta cheese.
