Ingredients
  

2 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups baby spinach

12 oz fettuccine or pasta of choice

Fresh basil, for garnish

Additional Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Season the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and black pepper.

      Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside to rest.

        Prepare the Sauce: In the same skillet, reduce the heat to medium and add the minced garlic and red pepper flakes. Sauté for approximately 1 minute until fragrant, careful not to burn the garlic.

          Add Tomatoes and Cream: Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they begin to soften. Then, pour in the heavy cream, stirring to combine.

            Incorporate Cheese: Gradually whisk in the grated Parmesan cheese, allowing it to melt and thicken the sauce. Season with more salt and black pepper to taste.

              Combine Pasta and Chicken: Add the cooked fettuccine, baby spinach, and a splash of reserved pasta water to the sauce. Toss everything together until well combined. Slice the rested chicken and place it on top of the pasta.
