Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 cup parmesan cheese, grated

8 oz fettuccine pasta

2 cups fresh spinach

Fresh basil, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

Cook the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken breasts and cook for about 5-7 minutes per side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.

Sauté Aromatics: In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant.

Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.

Make the Sauce: Pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Stir in the grated parmesan cheese until it melts and the sauce thickens.

Cook the Pasta: In a separate pot, boil salted water and cook the fettuccine according to package instructions until al dente. Drain and set aside.

Combine Ingredients: Add the cooked fettuccine to the skillet along with the fresh spinach. Slice the chicken and place it on top of the pasta. Toss everything gently to combine, allowing the spinach to wilt.

Serve: Garnish with fresh basil and an additional sprinkle of parmesan, if desired. Serve hot and enjoy your Marry Me Chicken Pasta!
