6 large eggs

1 cup egg whites

1 cup cooked black beans (canned or boiled)

1 cup diced bell peppers (mix of red, yellow, and green)

1 cup diced red onion

1 cup cooked lean turkey sausage (or chicken sausage), crumbled

1 cup shredded low-fat cheese (cheddar or Mexican blend)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

6 whole wheat tortillas

Fresh cilantro or parsley for garnish

Salsa or hot sauce for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet (approximately 18x13 inches) with parchment paper for easy clean-up.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the whole eggs and egg whites. Add cumin, smoked paprika, salt, and pepper, mixing until well combined.

      Cook the Vegetables: In a skillet over medium heat, add a splash of cooking spray or a small amount of olive oil. Sauté the diced bell peppers and red onion for about 5-7 minutes until softened. Remove from heat.

        Combine Ingredients: To the egg mixture, add the sautéed vegetables, black beans, crumbled turkey sausage, and half of the shredded cheese. Stir gently until everything is nicely combined.

          Bake the Egg Mixture: Pour the mixture onto the prepared sheet pan, spreading it evenly. Bake in the preheated oven for 15-20 minutes or until the eggs are fully set and lightly golden on top.

            Assemble the Burritos: Once baked, remove the sheet pan from the oven and let it cool for a few minutes. Cut the egg mixture into 6 equal rectangles. On each whole wheat tortilla, place one rectangular portion of the egg mixture and sprinkle the remaining cheese on top.

              Roll the Burritos: Roll each tortilla tightly, folding in the sides to create a burrito. Place them seam-side down on the sheet pan.

                Final Bake (Optional): If you prefer a crispy burrito, return the assembled burritos to the oven and bake at 400°F (200°C) for an additional 5-10 minutes.

                  Serve: Remove from the oven and serve warm, garnished with fresh cilantro or parsley. Enjoy with salsa or hot sauce if desired!
