8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup unsalted butter

2 tablespoons olive oil

Zest and juice of 1 lemon

5 oz fresh spinach

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt the butter and olive oil together. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.

      Add the Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and are cooked through.

        Combine Ingredients: Reduce the heat to medium. To the skillet, add the lemon zest, lemon juice, and the fresh spinach. Stir until the spinach wilts down, which should take about 1-2 minutes.

          Mix Pasta and Sauce: Add the drained pasta to the skillet with the shrimp and spinach. If the mixture seems dry, gradually add reserved pasta water until the desired consistency is achieved. Toss everything together until well combined.
