This quick and easy recipe combines whole grain pasta with cherry tomatoes, cucumbers, and bell peppers, all tossed in a zesty lemon dressing. 8 oz whole grain pasta (fusilli or penne work well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red or yellow), diced

1/2 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup fresh parsley, chopped

1/4 cup lemon juice (freshly squeezed)

2 tbsp olive oil

1 tbsp maple syrup (or agave syrup)

1 tsp garlic powder

Salt and pepper to taste

Optional: 1/4 cup nutritional yeast for a cheesy flavor

Instructions
 

Cook Pasta: In a large pot, bring salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, olive oil, maple syrup, garlic powder, salt, and pepper until well combined.

      Combine Salad Ingredients: In a large mixing bowl, add the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, chopped basil, and parsley.

        Mix Dressing with Salad: Pour the dressing over the pasta salad. Add nutritional yeast if desired. Toss gently until all ingredients are well mixed and evenly coated with the dressing.

          Taste and Adjust: Check for seasoning and adjust salt, pepper, or lemon juice to your liking.

            Chill and Serve: Cover the bowl with plastic wrap and let the salad chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.

              Garnish: When serving, you can add extra fresh basil on top for garnish and a sprinkle of nutritional yeast for an extra cheesy flavor.
