Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 pound ground beef (or ground pork for variation)

1/2 cup breadcrumbs (panko preferred for texture)

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon black pepper

1 egg, beaten

1 tablespoon gochujang (Korean chili paste)

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon honey

1 teaspoon lime juice

Pinch of salt

Instructions
 

Prepare the Meatballs:

    - Preheat your oven to 400°F (200°C).

      - In a large mixing bowl, combine the ground meat, breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, black pepper, beaten egg, and gochujang.

        - Mix everything together with your hands or a spoon until well combined.

          Form the Meatballs:

            - Shape the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.

              Bake the Meatballs:

                - Bake in the preheated oven for 15-20 minutes, or until they are cooked through and have a nice caramelization.

                  Make the Spicy Mayo Dip:

                    - While the meatballs are baking, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, honey, lime juice, and a pinch of salt in a small bowl until smooth and creamy. Adjust seasoning to taste.

                      Serve:

                        - Once the meatballs are done, remove them from the oven and allow to cool slightly. Serve the meatballs warm, garnished with sesame seeds and chopped green onions, alongside the spicy mayo dip.
