8 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 tsp allspice

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and black pepper to taste

1 cup coconut milk

1/2 cup heavy cream

1/4 cup lime juice

2 tbsp fresh cilantro, chopped (plus extra for garnish)

Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine (or linguine) and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté Vegetables: In a large skillet over medium heat, heat the olive oil. Add the onion and garlic, cooking for about 2-3 minutes until softened. Then, add the sliced red and green bell peppers, and cook for an additional 3-4 minutes until they are tender.

      Cook the Shrimp: Add the shrimp to the skillet. Season with allspice, smoked paprika, cayenne pepper, salt, and black pepper. Cook for about 4-5 minutes, or until the shrimp are pink and opaque.

        Make the Sauce: Pour in the coconut milk and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer and allow it to cook for 5 minutes, letting the flavors meld together. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing gently to coat the pasta with the creamy shrimp sauce. Stir in the lime juice and fresh cilantro for a burst of flavor.
