8 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup heavy cream

1 cup coconut milk

2 tbsp Jamaican curry powder

1 tsp thyme (dried)

Salt and pepper to taste

2 tbsp fresh parsley or cilantro, chopped (for garnish)

Zest of 1 lime

Juice of 1 lime

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Peppers: Add the sliced red and green bell peppers to the skillet. Cook for about 5 minutes until they soften.

        Prepare the Shrimp: Increase the heat to medium-high. Add the shrimp to the skillet and season with Jamaican curry powder, thyme, salt, and pepper. Cook until the shrimp turn pink and opaque, around 3-4 minutes.

          Create the Sauce: Lower the heat back to medium. Pour in the heavy cream and coconut milk, stirring to combine. Let the sauce simmer for about 3-5 minutes, allowing it to thicken slightly.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet. Toss to coat the pasta in the creamy shrimp mixture, adding reserved pasta water a little at a time to reach desired consistency.

              Finish with Lime: Stir in lime zest and juice for a bright flavor. Adjust seasoning if necessary.
