2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

¼ tsp ground nutmeg

½ tsp salt

½ cup unsalted butter, softened

¾ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)

2 cups peeled and diced apples (such as Honeycrisp or Granny Smith)

½ cup chopped walnuts or pecans (optional)

1 tbsp granulated sugar (for topping)

½ tsp ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each. Pour in the vanilla extract and mix until well combined.

          Mix in Buttermilk: Alternately add the dry mixture and the buttermilk into the butter mixture, starting and ending with the dry ingredients. Mix just until combined.

            Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

              Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

                Prepare Topping: In a small bowl, mix together the granulated sugar and ground cinnamon. Sprinkle this mixture evenly over the muffin batter in each cup.
