2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

2 large eggs

¾ cup unsweetened applesauce

½ cup vegetable oil

1 teaspoon vanilla extract

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

½ cup brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, 1 teaspoon ground cinnamon, and salt until well combined.

      Combine Wet Ingredients: In a separate medium bowl, beat the eggs, then mix in the applesauce, vegetable oil, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix; a few lumps are okay.

          Add Apples and Nuts: Gently fold in the diced apples and walnuts or pecans (if using) until evenly distributed through the batter.

            Prepare Topping: In a small bowl, combine the brown sugar and 1 teaspoon of ground cinnamon. Set aside.

              Fill Muffin Cups: Scoop the batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the brown sugar mixture generously over the top of each muffin.
