1/2 cup unsweetened applesauce

1/4 cup maple syrup or honey (optional, adjust based on sweetness of apples)

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices and a sprinkle of cinnamon for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9 inch baking dish.

Prepare the Ingredients: In a large mixing bowl, combine the rolled oats, diced apples, applesauce, almond milk, maple syrup (if using), ground cinnamon, vanilla extract, baking powder, and salt. Stir until all ingredients are well combined.

Add Nuts and Dried Fruit: If you’re using walnuts or pecans and raisins or cranberries, fold them into the mixture.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish and spread it evenly. Use a spatula to smooth the top.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is set and lightly golden.

Cool and Serve: Remove the dish from the oven and let it cool for a few minutes. You can serve it warm, topped with fresh apple slices and a sprinkle of cinnamon if desired.

Store Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 4-5 days. Reheat in the microwave before serving.
