Ingredients

2 cups apple cider

2 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

½ teaspoon vanilla extract

2 large eggs

½ cup unsalted butter, melted and slightly cooled

½ cup buttermilk

For coating:

½ cup melted butter

1 cup granulated sugar mixed with 2 teaspoons ground cinnamon

Instructions

Reduce the Apple Cider: In a saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and simmer until it reduces to 1 cup (about 15-20 minutes). Let it cool slightly.

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut baking pan.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

Combine Wet Ingredients: In another bowl, whisk together the cooled apple cider, vanilla extract, eggs, melted butter, and buttermilk until well combined.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients, mixing gently until just combined. Avoid overmixing.

Fill the Donut Pan: Transfer the batter into a piping bag or a ziplock bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about ¾ full.

Bake the Donuts: Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when lightly touched and a toothpick inserted comes out clean.

Cool the Donuts: Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Coat the Donuts: While the donuts are still warm, dip each one in melted butter and then roll in the cinnamon-sugar mixture until well coated.

Serve: Enjoy the donuts warm or at room temperature with a cup of hot apple cider for a delightful treat!
