Ingredients
  

1 lb (450g) baby carrots, peeled and trimmed

4 tablespoons unsalted butter

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a medium saucepan over low heat, melt the butter. Add the honey and minced garlic, stirring until combined. Remove from heat.

      In a large bowl, toss the baby carrots with the melted honey garlic butter, salt, pepper, and thyme until well coated.

        Spread the carrots out in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and lightly caramelized, tossing halfway through for even cooking.

            Once roasted, remove the carrots from the oven. Taste and adjust seasoning if necessary.

              Garnish with fresh parsley before serving.
