Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

1 lb ground beef

4 medium potatoes, diced

1 cup onion, chopped

1 cup bell pepper, chopped (any color)

1 can (15 oz) green beans, drained

1 cup shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat, if necessary.

      Add Vegetables: Stir in the chopped onion and bell pepper to the skillet. Sauté until the onion is translucent, about 4-5 minutes.

        Combine Ingredients: In a large mixing bowl, combine the browned beef and vegetable mixture with diced potatoes, green beans, garlic powder, paprika, beef broth, and cream of mushroom soup. Season with salt and pepper to taste.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top with Cheese: Sprinkle the shredded cheddar cheese over the top of the casserole.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are fork-tender and the cheese is bubbly and golden.

                Garnish and Serve: Once done, take the casserole out of the oven, garnish with fresh parsley, and let it cool for a few minutes. Serve while hot!
