2 cups shredded cooked chicken breast

1 cup black beans, rinsed and drained

1 cup low-fat Greek yogurt

1 cup salsa (your favorite style)

1 ½ cups shredded cheese (cheddar or a blend)

8 whole wheat tortillas

1 tbsp taco seasoning

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mix Filling: In a large bowl, combine the shredded chicken, black beans, Greek yogurt, taco seasoning, and half of the salsa. Mix well until all ingredients are evenly coated.

      Fill Tortillas: Take a whole wheat tortilla, place a generous portion (about ¼ cup) of the chicken mixture in the center, and roll it up tightly. Repeat with the remaining tortillas and filling.

        Prepare Baking Dish: Spread the remaining salsa on the bottom of a 9x13 inch baking dish to prevent sticking.

          Arrange Enchiladas: Place the rolled enchiladas seam-side down in the prepared baking dish.

            Add Cheese: Sprinkle the shredded cheese evenly over the top of the enchiladas.

              Bake: Cover with foil and bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes, allowing the cheese to melt and become bubbly.

                Serve: Remove from the oven and let sit for a few minutes before serving. Garnish with additional salsa or Greek yogurt, if desired.
