Hawaiian Shoyu Chicken

Ingredients
  

2 lbs chicken thighs (bone-in, skin-on for best flavor)

1/2 cup soy sauce (preferably a higher quality shoyu)

1/4 cup brown sugar

1/4 cup honey

1/4 cup rice vinegar

4 cloves garlic, minced

1-inch piece ginger, grated

2 green onions, chopped (for garnish)

1 tablespoon sesame oil

1 teaspoon black pepper

1 teaspoon crushed red pepper flakes (optional for heat)

2 cups water

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, sesame oil, black pepper, and crushed red pepper flakes if using. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Prepare for Cooking: Preheat your oven to 375°F (190°C). Remove the chicken from the marinade and set the marinade aside for later use.

      Sear the Chicken: In a large oven-safe skillet or dutch oven, heat a tablespoon of oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden and crispy, about 5-7 minutes. Flip the chicken and sear the other side for about 3 minutes.

        Add Marinade and Water: Pour the reserved marinade and water into the skillet, around the chicken (do not pour over the chicken skin as you want it to remain crispy).

          Bake the Chicken: Place the skillet in the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Baste the chicken with the sauce halfway through cooking for extra flavor.

            Finish and Garnish: Once cooked, remove the chicken from the oven. Let it rest for 5-10 minutes before serving. Garnish with chopped green onions.

              Serve: Enjoy this delicious Hawaiian Shoyu Chicken with steamed rice and a side of sautéed vegetables. Drizzle some of the remaining sauce on top for extra flavor.
