Ingredients

1 lb ground turkey

2 cups mixed stir-fry vegetables (bell peppers, broccoli, snap peas, carrots)

3 tablespoons teriyaki sauce

1 tablespoon soy sauce (low sodium, if preferred)

2 cloves garlic, minced

1 tablespoon ginger, minced or grated

2 tablespoons sesame oil (or vegetable oil)

1 tablespoon cornstarch

1/4 cup chicken broth (or water)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Sauce: In a small bowl, mix together teriyaki sauce, soy sauce, cornstarch, and chicken broth. Stir until the cornstarch dissolves thoroughly; set aside.

Cook the Turkey: In a large skillet or wok, heat sesame oil over medium-high heat. Add the ground turkey and cook for 5-7 minutes, stirring occasionally, until fully browned and cooked through.

Add Aromatics: Stir in minced garlic and ginger for the last 1-2 minutes of cooking until fragrant.

Incorporate Vegetables: Add the mixed stir-fry vegetables to the turkey. Cook for another 3-5 minutes, stirring frequently, until the vegetables are tender-crisp.

Add Sauce: Pour the teriyaki sauce mixture over the turkey and vegetables. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.

Serve: Remove the stir fry from heat. Serve hot over cooked rice or quinoa and garnish with chopped green onions and sesame seeds.
