1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, chopped

1 cup spinach, chopped

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro, for garnish (optional)

Instructions
 

Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat.

    Cook the Sweet Potatoes: Add the diced sweet potatoes and sauté for about 10 minutes, stirring occasionally, until they begin to soften and brown slightly.

      Add Vegetables: Stir in the diced onion and red bell pepper. Cook for an additional 5-7 minutes, until the onion is translucent and the peppers are tender.

        Add Garlic and Spices: Add the minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Cook for 1-2 minutes until fragrant.

          Cook the Turkey: Push the vegetables to the side of the skillet. In the center, add the ground turkey, breaking it apart with a spatula. Cook for about 5-7 minutes until the turkey is browned and cooked through.

            Mix and Add Spinach: Once the turkey is fully cooked, stir everything together. Fold in the chopped spinach and cook for another 2-3 minutes until the spinach is wilted.

              Serve: Remove from heat, garnish with fresh cilantro if desired, and serve warm.
