Ground Turkey Sweet Potato Skillet

Ingredients
  

1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup black beans, drained and rinsed

1/2 cup corn (fresh or frozen)

1 tablespoon lime juice

Fresh cilantro for garnish (optional)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat.

    Cook the Sweet Potatoes: Add the diced sweet potatoes and sauté for about 10 minutes, stirring occasionally, until they start to soften.

      Add Onion and Pepper: Add the diced onion and red bell pepper to the skillet. Cook for another 5 minutes until the onions become translucent.

        Sauté Garlic: Stir in the minced garlic and cook for an additional 1 minute until fragrant.

          Cook the Turkey: Push the vegetables to the side of the skillet and add the ground turkey to the center. Break it apart with a spatula and cook for about 5-7 minutes until it's browned and fully cooked.

            Season: Sprinkle the smoked paprika, cumin, chili powder, salt, and pepper over the turkey and vegetables, stirring to combine everything thoroughly.

              Add Beans and Corn: Mix in the black beans and corn, allowing them to heat through for 3-4 minutes.

                Finish with Lime: Remove from heat and stir in the lime juice. Adjust seasoning if necessary.

                  Serve and Garnish: Spoon the mixture into bowls and garnish with fresh cilantro if desired.
