1 pound ground turkey

2 large sweet potatoes, peeled and diced

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup frozen corn

1 can black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add the diced sweet potatoes and cook for about 10-15 minutes, or until tender. Drain and set aside.

      Prepare the Turkey Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for 3-4 minutes until softened.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.

          Season the Mixture: Stir in the corn, black beans, cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 2-3 minutes, mixing everything together well.

            Combine with Sweet Potatoes: In a large mixing bowl, combine the cooked sweet potatoes with the turkey mixture. Gently fold to combine, ensuring all ingredients are evenly distributed.

              Assemble the Casserole: Pour the mixture into a greased 9x13 inch casserole dish. Top evenly with shredded cheese.
