Ground Turkey and Peppers

This flavorful skillet dish combines ground turkey with colorful bell peppers, onions, and spices, all simmered with diced tomatoes for extra zest. Ingredients
  

1 lb ground turkey

2 bell peppers (any color), diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup canned diced tomatoes (with juice)

1 tbsp olive oil

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Cooked rice or quinoa (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent.

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the ground turkey to the skillet. Break it up with a wooden spoon and cook until browned, about 5-7 minutes.

        Season the turkey with cumin, smoked paprika, chili powder, salt, and pepper. Stir well to combine.

          Add the diced bell peppers to the skillet and cook for another 3-4 minutes, allowing them to soften slightly.

            Pour in the canned diced tomatoes, including the juices. Stir everything together and reduce the heat to low. Let it simmer for 10-15 minutes, stirring occasionally.

              Taste and adjust seasoning if necessary.

                Serve the turkey and pepper mixture over a bed of cooked rice or quinoa, garnished with fresh cilantro or parsley if desired.
