1 lb ground beef

3 medium russet potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

1 cup frozen mixed vegetables (carrots, peas, corn)

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Start by washing and dicing the potatoes into 1/2-inch cubes. Chop the onion and mince the garlic. Set all aside.

    Cook the Ground Beef: In a large skillet or deep pan, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula. Drain excess fat if necessary.

      Add Vegetables: Stir in the chopped onion and garlic into the ground beef. Cook for about 3-4 minutes until the onions are translucent and fragrant.

        Combine with Potatoes: Add the diced potatoes to the skillet and mix well. Cook for another 5 minutes, stirring occasionally, to slightly soften the potatoes.

          Add Broth and Seasonings: Pour in the beef broth, Worcestershire sauce, paprika, thyme, salt, and black pepper. Stir thoroughly to combine everything.

            Simmer It Together: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover and simmer for about 20-25 minutes or until the potatoes are tender, stirring occasionally.
